Roll’d
Roll’d is bringing its distinctive Vietnamese fast-casual experience to communities throughout New Zealand creating opportunities for ambitious franchise partners to join the journey.
Founded in Melbourne in 2012, Roll’d has grown from one restaurant into an established network that has reached the milestone of 150 store openings. Its first New Zealand restaurant opened at Sylvia Park in 2025, marking the brand’s first international expansion. This was followed by Westfield St Lukes and Botany Town Centre, with a strong pipeline of new locations now planned across the country.
Roll’d combines vibrant Vietnamese flavours, family-inspired recipes and a convenient service model designed for today’s customers. Its menu includes fresh rice paper rolls, banh mi, pho, bao, Vietnamese salads, noodle bowls, broken rice dishes, sides and drinks – providing choices across lunch, dinner, takeaway, delivery and catering occasions.
Why Franchise with Roll’d?
A Distinctive Food Proposition
Roll’d occupies a differentiated position within the fast-casual market, offering fresh Vietnamese food in an accessible and convenient format.
The food is inspired by the recipes and traditions of the founders’ families, including recipes passed down through the Hoang family. This authentic foundation is combined with modern restaurant systems, strong branding and a menu designed to travel well.
Roll’d restaurants can operate in a range of retail environments, including shopping centres, food courts, transport hubs and shopping strips, creating flexibility as the brand expands across New Zealand.
An Established and Growing Brand
Roll’d was founded by Bao Hoang, Ray Esquieres and Tin Ly, who opened the first restaurant in Melbourne in 2012. On opening day, Mama Hoang’s rice paper rolls reportedly sold out within 90 minutes.
The brand reached 50 store openings in 2016, celebrated its 100th opening in 2020 and continued expanding throughout the pandemic. By 2025, Roll’d had achieved 150 store openings and launched its first international restaurant in Auckland.
New Zealand franchisees therefore have the opportunity to join a developed franchise system while the local network is still at an early and important stage of its growth.
A Turnkey Restaurant Package
Roll’d provides a turnkey business package designed to take franchisees from approval through to opening.
A typical Roll’d franchise requires an investment of approximately NZ$450,000 to NZ$600,000, depending on the restaurant’s location, size and individual requirements..
Comprehensive Franchisee Training
New Roll’d franchise partners complete a structured nine-week training programme.
The programme combines classroom learning, practical restaurant experience and operational training to prepare franchisees to lead their teams and operate the Roll’d system from opening day.
Training progresses from the foundations of the brand and restaurant model through to store operations, advanced operational management, simulations and launch preparation.
Support continues beyond the initial programme, with assistance available across operations, systems, recruitment, property, marketing and business development.
Supported Locally by Mammoth Brands
Roll’d’s New Zealand expansion is led by Mammoth Brands, an experienced hospitality group with a support structure developed through operating and growing more than 100 stores.
Mammoth Brands has extensive experience in franchising, restaurant operations, property development, supply chains and brand growth. Its portfolio and operating experience provide Roll’d franchisees with local knowledge and infrastructure alongside the systems and experience of the wider Roll’d network.
This combination gives franchisees the benefit of joining an established international brand while working with a New Zealand-based team that understands the local hospitality, property and franchise markets.
